Heirloom Restaurant unveils exclusive wine pairing with Waterford Estate

Heirloom Restaurant has announced a limited-time wine pairing menu in collaboration with Waterford Estate. This dining experience invites guests to explore the culinary heritage of Cape Town alongside the esteemed wines of Waterford Estate.

The five-course menu is the result of a collaboration between Heirloom's chef, the restaurant's sommelier, Alvezo Abrahams, and the Waterford Estate winemaker. This experience employs a reverse pairing approach, where each dish is inspired by a specific wine, ensuring a complementary relationship between food and drink.

“Our approach allows us to create a harmonious experience,” says Alvezo Abrahams, Heirloom’s sommelier. “By letting the wines guide the dishes, guests can appreciate how each wine influences the flavours of the ingredients. It becomes more than just a meal; it is about the story conveyed through taste.

“We have also very carefully chosen limited-edition and estate wines in order to offer diners a unique experience.” 

The menu features local and seasonal ingredients that reflect the diverse flavours of Cape Town. It is designed to appeal to both local food enthusiasts and international visitors. Plus, Alvezo and team are on hand to guide guests through an engaging narrative, explaining the inspiration behind each dish, the wine selections, and the background of Waterford Estate.

Menu Highlights Include:

• The Blanc de Blanc Cap Classique 2018 paired with tuna, served with toasted brioche, roasted black garlic aioli, apple jelly, and crisp apple sticks.
• The Elgin Sauvignon Blanc 2024 accompanying rainbow trout with pepper salsa, avocado purée, and garlic crumble.
• The Chardonnay 2015 partnered with pork belly glazed in white wine orange beurre blanc.
• A choice between The Jem, a 2017 Red Blend, or the very special Kevin Arnold Shiraz 2016 with a beef course that includes beef tongue, fillet of beef, salted candied tomatoes, and cauliflower purée on potato fondant with Jem jus.
• The Heatherleigh NV Dessert Wine paired with poached pear, chocolate sorbet, and pistachio mousse.

The Waterford partnership is the first in a series of wine pairing dinners that are taking place at Heirloom Restaurant, at Cape Grace.
